Happy Daylight Savings Time, Mainers!

What a glorious day! First I wanna say thank you to all the amazing CBO customers that made donations to help the Midcoast Maine Bags Of Blessings Project! They are a fantastic organization and we had so much fun yesterday helping our new buddies pack back packs. We all know what we can do to prepare our bodies for the sickies that plague our homes, schools and work spaces.

This is an excellent dish to familiarize yourself with to maybe break out on

Thanksgiving to spice up the usual carb heavy side dishes!

Pilgrims loved beets… I think.

Yes! Turns out when they weren’t too busy wearing buckled shoes and hats (why did that look EVER go out of style)

 they were munching on this underrated root vegetable.

The two main ingredients in this dish are goodies you can find in your

Casco Bay Organics delivery!  You can feel good knowing your produce is local, organic, and full of

nutrients to keep you feeling your best all winter long.

BEETS— here to fight off inflammation and help detoxify your blood…send that cold

MIZUNA GREENS—full of vitamin C, your not-so-secret weapon commonly used at the

first sign of a runny nose.

Dinner guests will swoon over the bright ruby color which will be all over your hands

after handling them(Not unlike, say, a crime scene)

They’ll say, “Ooooh! What’s that?!”

You’ll say matter of factly, “Oh this immune boosting salad? Yeah, just something I’ve been using to stay healthy this season!”

BONUS—-beets may boost your libido! ←I would say that’s a pretty solid plus side to trying this dish!

Walnut Beet Salad with Mizuna Greens

8 oz organic beets washed, peeled and chopped

1⁄4 cup grapeseed oil, divided

himalayan pink salt

1 onion, chopped

1 garlic clove, minced

1 small fennel bulb, sliced

2 Tablespoons grated ginger root

2 Tablespoons dijon mustard

2 Tablespoons apple cider vinegar

1 Tablespoon organic honey or maple syrup

juice of 1⁄2 lemon

1 bunch organic mizuna greens

1⁄4 cup walnuts, toasted and chopped

Preheat oven to 400 degrees and bake beets drizzled with 2 Tablespoons grapeseed oil for 50-55 minutes.

In a skillet, heat remaining 2 tablespoons oil with onion, garlic and fennel until

softened, about 5 minutes over MED-LOW heat. Remove from heat and toss with beets when finished.

Combine ginger, mustard, sweetener, lemon juice and salt and pepper in a bowl.

Massage dressing into mizuna greens with hands until leaves are coated and slightly

wilted. Toss beet onion mixture together with dressed greens and garnish with toasted walnuts!

Go Shawty, It’s Your Verde

Never have I ever eaten a tomatillo until I received some from Casco Bay Organics.

I love that they send me things I wouldn’t normally buy in the grocery store because it forces me out of my habitual eating routine and allows me to experiment with new tastes! I feel like the macguyver of modern produce.  Although, he has much cooler hair.

Do you ever go out of your way to try new foods?  Or are you super comfortable right where you are with your bowl of buttered noodles PLAIN?  Feed your appetite for adventure and you may just come away with new favorite foods and flavors.

I have likes and dislikes just like everybody else.

Likes: tropical fruit smoothies, ice cream, pumpkin flavored anything.

Dislikes: seafood, pickles, olives, mayonnaise.

I liked pumpkin spice

 I distinctly remember turning away a pickle at a birthday party when I was all of 7 years old. I can remember saying “No thanks, I don’t LIKE pickles!” and the mother of the birthday girl said “Keep trying them, your taste can always change!”

WAIT….what?

Everything I’ve ever known to be true in the world has been a LIE.

Well…not really. But since then, I have made it a point to always try the foods I dislike. I was so fascinated with this idea that one day I might ENJOY eating that which makes me cringe.

 And you know what? My taste has TOTALLY changed. I’ve learned I like certain spicy seafood dishes. I actually enjoy pickle flavor, just not the actual pickle. You never know, someone could prepare a dish completely different than you ever imagined and you could fall in love with your least favorite food!

Some things turn my stomach and so I physically can not consume them. Avocados were very hard for me to eat because of this reaction and I thought it was a life sentence! I knew the crazy benefits of avocados and I just kept thinking “I gotta make this work!”

I began by hiding avocados in sweet smoothies and puddings. I would mask the weird flavor with chocolate and over time, I began to enjoy consuming avocados. Fast forward a year and now I can enjoy avocados on their own with a little salt!

I encourage everyone to try this simple idea out in their own eating endeavors. This is a wonderful way to discover new tastes, get to know your body, see how it changes and its a wonderful example for children who are picky eaters. It was a lesson I learned when I was very young and I stand by it today, 20 years later.

This week, I made a refreshing salsa verde with the avocados, tomatillos and jalapeno peppers I received from Casco Bay Organics! This recipe is too easy NOT to try! Just toss the ingredients in a food processor and voila!

                                                                                   SUPER EASY Salsa Verde

                                                                             1 organic avocado

                                                                                         7-10 organic tomatillos husked and rinsed

Avacado3 TBS fresh cilantro

½ red onion

2 jalepenos

2 garlic cloves

salt and pepper to taste

Blend all ingredients together in a food processor until smooth. Enjoy with some chippies, fresh organic veggies,  or spoon on top of salad or grilled chicken! YUM YUM YUM.

Seasonal Eating/ Fall Superlatives: Most Likely to Be Flavorful

Seasonal Eating is an excellent way to keep your grocery bill in check. You can count on what’s growing locally to be available for a reasonable cost RIGHT NOW.

 

The taste. OH THE TASTE of seasonal produce is UNREAL. These goodies are getting pulled from the ground super mario 2 style, dropped in a bucket and transported only a few miles. No chilling, no freezing, no long transports.

 

SUPER FRESH. Nutrients stay in tact. You are getting the best version of your produce.

 

Variety! The spice of life! Eating seasonally can offer a wide array of produce to try. This gives you an opportunity to experience something new!

 

This week I used an organic buttercup squash from my goodie box to put a spin on an old favorite of mine, squash and sage risotto. I swapped the arborio rice out for cauliflower rice pumping up the veggie content and making this dish allergy friendly and lower in carbohydrates. I also added spinach or swiss chard as an option because I like to add greens to my meals when possible!

 

 

Grain-Free Harvest “Rice”

 

2 Tablespoons olive oil

2 shallots, thinly sliced

1 garlic clove, chopped

½ riced cauliflower

1 organic buttercup squash, seeds removed

2 cups chopped organic spinach OR rainbow chard

¾ cup organic chicken broth

2 Tablespoons fresh sage, chopped

1 teaspoon fresh thyme

1 teaspoon pink Himalayan salt or sea salt

½ tsp pepper

¼ cup toasted pine nuts

 

Preheat oven to 425 degrees and pierce the top and sides of the buttercup squash with a fork. Place squash on a baking sheet and roast 20 minutes. Remove from the oven and let squash rest until its cool enough to handle.

 

When squash is cooled, slice the top off and scoop out the seeds from the center. Continue to scoop the inside of the squash out until you have separated the squash “meat” from the skin. Chop squash “meat” and set aside.

 

Chop cauliflower into pieces and use a food processors grate blade to “rice” it. Alternatively, you can use a box grater and hand grate the vegetable yourself.

 

Heat olive oil in a saucepan and sautee shallots and garlic for 2 minutes over Med-Low heat. Add riced cauliflower and ¾ cup of chicken broth and let simmer for 5 minutes before adding squash and spinach.

 

Add herbs and seasonings and stir until the spinach wilts, about 2 minutes. Remove pan from heat.

 

Toss pine nuts in small frying pan with a spray of oil or butter and toast over Med-Low heat until fragrant and lightly browned. Sprinkle over warmed harvest “rice” and enjoy!

“I never buy fresh vegetables because they always go bad…”

 

Can you relate?

 

Picture it:

 

Lettuce goes on sale at the grocery store. You buy two big, beautiful, green heads with the intention of being “super healthy” this week. You picture yourself giggling wildly over a bountiful salad at work while your co-workers look on enviously…”GOD! Thats a great salad..” to which you reply.. “ AND the lettuce was on SALE!”

 

You Thrifty McHealthnut, you.

 

Flash forward to reality:

 

You wake up late. No time for breakfast let alone CHOPPING LETTUCE FOR LUNCH. You plan to use the lettuce for dinner, but because you didn’t bring lunch, you are deliriously hungry by your 5 pm evening commute.

 

The stomach pains are real as you inch your way through traffic.

 

You can’t take this feeling any longer. You could quite possibly die from starvation at the wheel. At this point, your brain takes over and pulls into the nearest gas station/fast food joint and you order anything and everything yelling numbers and pointing frantically at the board because this is survival we’re talking about here.

 

Three days of “life stuff” and that once bright and crispy lettuce is now wilted, soft and kind of stinky. Into the trash it goes along with the shattered dreams of hilarious salads.

 

I’ve been there, man.

 

And I can help.

 

I utilize Casco Bay Organics’ produce delivery service to prevent the previous scenario from occurring in my own life. I’ll be dishing out some creative recipes using the delicious produce Casco Bay Organics has to offer. This way, you have access to recipes every week using the exact same organic goodies I am using.

This week, I used some baby bella mushrooms and a HUGE daikon radish in this Asian-inspired vegetable soup. I kept the ingredients simple and used what I had in the house to make this an easy recipe you can try without taking another trip to the store. Enjoy!

 

Asian-Inspired Veggie-Coconut Soup

2 Tablespoons olive oil

1 chopped yellow onion

8 oz. organic bella mushrooms

2 cloves garlic, minced

6 cups vegetable broth

1 large organic Daikon Radish, julienne sliced  into “noodles”

1 Tablespoon fresh ginger, minced

1 Tablespoon lime juice

2 teaspoons red pepper flakes

Sea Salt and Pepper

1 can full fat organic coconut milk

2 green onion stalks, chopped

¼ cup fresh cilantro, chopped

 

Heat oil in a soup pot and saute chopped onion, garlic and mushrooms for 10 minutes on Med-Low heat.

Add broth and daikon noodles and bring soup to a boil for 2 minutes. Toss in the ginger, lime juice and red pepper flakes and stir until combined.  Season with salt and pepper. Cover pot and reduce heat to a simmer for 15 minutes until daikon and mushrooms are tender

Remove the soup from heat and stir in coconut milk. Garnish with chopped cilantro and green onion and serve warm. Enjoy!
