Ch Ch Ch CHIA Seeds

Have you heard all the talk about Chia seeds?  Do you know what they are?  Did you know that they are more than just the little seeds you plastered on a clay head and placed in your kitchen window?

Chia seeds are interesting to say the least. They can be eaten raw on salads or yogurt.  They can also be mixed with your favorite beverage for a little texture.  They form a slippery coating when soaked in a liquid. Some can deal with that texture, some can’t.  You will never know until you try!  Ever tried Kombucha with the seeds in it?  If so, then you have already had Chia seeds!

Right up there with blueberries and acai berries, Chia seeds are LOADED with antioxidants! They are also loaded with omega-3 fatty acids, fiber, protein, calcium, manganese, magnesium, phosphorus and iron! Gimmie gimmie!

Some of the benefits to making these little treats a daily part of your diet are:

Digestion – by helping to regulate bowel function, improve digestion process

Helpful in treating Anemia which is a condition in which the body does not have enough healthy red blood cells to carry adequate oxygen to tissues, causing fatigue and many other health problems.

Wanna fight back? Make an anemia-fighting smoothie with:

2 cups of spinach

1 tablespoon of dandelion root powder

2 beetroots

1 banana

1 tablespoon of chia seeds

1 avocado

Blend all the ingredients thoroughly and drink it 1 or 2 times daily.

 

These little magic seeds also help cleanse the body and increase the red blood cell count. 

 

One of my favorite ways to eat Chia seeds is to make a pudding!  Yep, a non-dairy, vanilla or chocolate, sweetened pudding. This couldn’t be easier and couldn’t be yummier!  Sweets at night are a must have in my house and this fits in perfectly without making me feel guilty for eating it!  You can also make this with milk if you like! You are in charge of your own destiny!

 

CHIA SEED PUDDING

¼ Cup Chia Seeds

½ cup Coconut milk (this will vary depending on how thick you like your Chia seed pudding).

1 tsp. vanilla

1 to 2 tbsp. agave nectar or honey (you decide how sweet you wanna be J)

Mix all of the ingredients together and refrigerate overnight!  I had to play with the ratios of this recipe to get what I wanted.  Feel free to add your own twist to make it just right for you!
